Garrison Brothers Texas Straight Bourbon is crafted using organic corn, wheat, and barley. “We receive about 30,000 pounds of these grains each month,” explains Garrison. “Our wheat is grown on 65 acres right here on the property.” The corn is harvested from nearby Texas fields, while the barley is sourced from the Pacific Northwest.
After arriving at the distillery, the grains are ground and mashed. They undergo a four-day fermentation process. Once fermented, the wash is distilled in an old copper pot still called the copper cowgirl. “It was built as an experimental still for Wild Turkey Distillery,” Garrison shares. The bourbon then matures in charred American oak barrels. The charring softens the wood, helping the bourbon expand inside. When Texas heats up, the whiskey soaks deeper into the wood, pulling out rich flavors and chemicals.
Occasionally, Garrison releases Cowboy Bourbon. These special releases focus on the best barrels, chosen for longer aging. Master Distillers Donnis Todd and Dan Garrison select these barrels carefully, letting them age until they are perfect. The whiskey is bottled unfiltered and at cask strength. This year, 6,440 bottles of 131.3-proof bourbon were made. The first 1,000 sold out in just two hours.

Garrison Brothers is based on a ranch in Texas Hill Country. The distillery was founded in 2005. It is Texas’s oldest legal whiskey maker. “Our dreams were big from the start,” says Dan Garrison. “We wanted to make the best bourbon in the world.”
